A classic of Portuguese cuisine, Cozido à Portuguesa is a rich and nutritious dish made of meat, vegetables, and legumes.

Ingredients
- 2 kg of beef, chicken, and rabbit, cut into pieces
- 2 liters of broth
- 2 onions
- 2 carrots
- 2 potatoes
- 1 zucchini
- 1 pumpkin
- 1 red pepper
- 1 tomato
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 2 tablespoons of thyme
Method
- In a large pot, heat the olive oil and sauté the onions, carrots, and onion.
- Add the meat, broth, salt, and pepper, bring to a boil, and cook for about 2 hours.
- Add the vegetables, red pepper, and tomato, and continue cooking for another 45 minutes.
- Check the cooking and adjust with salt and pepper.
- Serve hot, with a good piece of bread.
