Ingredients

  • 250 g of white beans
  • 2 onions
  • 3 garlic cloves
  • 1 chili pepper
  • 200 ml of olive oil
  • 1 liter of bean broth
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 lemon
  • 100 g of Tuscan bread slices

Method

  1. Rinse the white beans and blanch them in boiling water for 5 minutes, then rinse and drain.
  2. In a large pan, sauté the onions and garlic in olive oil.
  3. Add the chili pepper and cook for 2 minutes.
  4. Add the white beans and bean broth, stir well.
  5. Bring to a boil, reduce heat and simmer for 30 minutes.
  6. Add salt and sugar, stir and let it rest for 10 minutes.
  7. Top with Tuscan bread slices and scrape with a spoon to create a crispy crust.
  8. Top with lemon, serve hot.

The story

Fasolia is a traditional dish from the Greek region of Epirus, brought to Egypt by migrants in the 20th century. In Port Said, it has become a local specialty, adapting its flavors to the marine climate.
