Pork with Parsley Sauce
A classic Danish dish, flæsk med persillesovs is a rich and delicious meal.

Ingredients
- 400 g of smoked pork belly
- 2 onions
- 200 ml of beef broth
- 100 g of parsley
- 200 g of potatoes
- 200 g of kale
- 100 ml of olive oil
- Salt and pepper to taste
- 1 tablespoon of white wine vinegar
Method
- Cut the smoked pork belly into small pieces and set aside.
- In a pan, sauté the finely chopped onions in olive oil until they become golden.
- Add the pork belly and cook for a few minutes.
- Add the beef broth and white wine vinegar, bringing to a boil.
- Add the cubed potatoes and parsley leaves, seasoning with salt and pepper.
- Place the kale leaves in a separate pan and cook until they are tender.
- Serve the pork with the onion sauce and potatoes, accompanied by the kale.
- Use the sautéed onions to flavor the dishes.
