Pork Shank with Sauerkraut

A classic of German cuisine, the pork shank with its crispy crust and aromatic sauce pairs perfectly with sauerkraut.

Ingredients
- 4 pork shanks
- 500 g of sauerkraut
- 2 onions
- 2 cloves of garlic
- 100 ml of olive oil
- 100 ml of red wine
- 100 ml of beef broth
- 100 g of parsley
- salt and pepper to taste
- 2 bay leaves
- 1 green bell pepper
Method
- Prepare the pork shank by cutting the skin and bones into smaller pieces.
- In a pan, sauté the onions and garlic in olive oil.
- Add the pork shank and cook over medium heat for 15-20 minutes.
- Pour in the red wine and beef broth, add salt, pepper, and bay leaves.
- Cover and simmer over low heat for 2-3 hours, until the meat is tender.
- Meanwhile, prepare the sauerkraut: heat in a pan with a little oil and add salt and pepper.
- Serve the pork shank with the sauerkraut and garnish with parsley and green bell pepper.
