Ingredients

  • 4 pork shanks
  • 500 g of sauerkraut
  • 2 onions
  • 2 cloves of garlic
  • 100 ml of olive oil
  • 100 ml of red wine
  • 100 ml of beef broth
  • 100 g of parsley
  • salt and pepper to taste
  • 2 bay leaves
  • 1 green bell pepper

Method

  1. Prepare the pork shank by cutting the skin and bones into smaller pieces.
  2. In a pan, sauté the onions and garlic in olive oil.
  3. Add the pork shank and cook over medium heat for 15-20 minutes.
  4. Pour in the red wine and beef broth, add salt, pepper, and bay leaves.
  5. Cover and simmer over low heat for 2-3 hours, until the meat is tender.
  6. Meanwhile, prepare the sauerkraut: heat in a pan with a little oil and add salt and pepper.
  7. Serve the pork shank with the sauerkraut and garnish with parsley and green bell pepper.
