Ingredients

  • 200 g of beef
  • 1 onion
  • 2 tomatoes
  • 1 zucchini
  • 1 carrot
  • 1 tablespoon of olive oil
  • 1 tablespoon of tomato sauce
  • salt and pepper to taste
  • 1 basil leaf
  • 1 rosemary leaf
  • 1 liter of beef broth
  • 100 g of beans

Method

  1. Cut the beef into small pieces and set aside.
  2. In a pan, heat the olive oil and sauté the onion until it turns golden.
  3. Add the vegetables (carrot, zucchini, tomatoes) and cook for a few minutes.
  4. Add the beef to the pan and cook until the meat softens.
  5. Add the beef broth, tomato sauce, salt, and pepper, and let it boil for 20-25 minutes.
  6. Finally, add the beans and basil with rosemary, stir well, and let it warm up for another 5-10 minutes.
  7. Serve hot, accompanied by some stale bread.

Lomo a lo Pobre is a traditional dish from Santiago, dating back to the late 19th century. Originally made with medium-quality beef, its recipe has remained unchanged over time.
