Poor Man's Loin

A simple yet flavorful dish from Santiago, made with beef and vegetables.

Ingredients
- 200 g of beef
- 1 onion
- 2 tomatoes
- 1 zucchini
- 1 carrot
- 1 tablespoon of olive oil
- 1 tablespoon of tomato sauce
- salt and pepper to taste
- 1 basil leaf
- 1 rosemary leaf
- 1 liter of beef broth
- 100 g of beans
Method
- Cut the beef into small pieces and set aside.
- In a pan, heat the olive oil and sauté the onion until it turns golden.
- Add the vegetables (carrot, zucchini, tomatoes) and cook for a few minutes.
- Add the beef to the pan and cook until the meat softens.
- Add the beef broth, tomato sauce, salt, and pepper, and let it boil for 20-25 minutes.
- Finally, add the beans and basil with rosemary, stir well, and let it warm up for another 5-10 minutes.
- Serve hot, accompanied by some stale bread.
