Poltava Kovbasa

Poltava Kovbasa is a delightful local specialty, crispy on the outside and tender on the inside, traditionally served with potatoes and salad.

Ingredients
- 500g of pancetta
- 200g of pork
- 100g of cooked ham
- 1 onion
- 2 cloves of garlic
- 2 teaspoons of red pepper flakes
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of Marsala salt
- 1 teaspoon of dried chili powder
- 1 teaspoon of chopped parsley
- 1 teaspoon of chopped oregano
Method
- Chop the pork and pancetta into small pieces and mix with the cooked ham, minced garlic, oregano, and parsley.
- Add the red pepper flakes, salt, and black pepper, mixing well.
- Form the kovbasa using a thread for each, wrapping the meat mixture.
- Cook the kovbasa in boiling water for about 20 minutes, then cool them in cold water.
- Serve the kovbasa with roasted potatoes and a salad.
