Ingredients

  • 500g of pancetta
  • 200g of pork
  • 100g of cooked ham
  • 1 onion
  • 2 cloves of garlic
  • 2 teaspoons of red pepper flakes
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of Marsala salt
  • 1 teaspoon of dried chili powder
  • 1 teaspoon of chopped parsley
  • 1 teaspoon of chopped oregano

Method

  1. Chop the pork and pancetta into small pieces and mix with the cooked ham, minced garlic, oregano, and parsley.
  2. Add the red pepper flakes, salt, and black pepper, mixing well.
  3. Form the kovbasa using a thread for each, wrapping the meat mixture.
  4. Cook the kovbasa in boiling water for about 20 minutes, then cool them in cold water.
  5. Serve the kovbasa with roasted potatoes and a salad.

Poltava Kovbasa has historical roots dating back to the 18th century, when local farmers used regional spices to preserve meat.
