Ingredients

  • 200g of ripe tomatoes
  • 4 onions
  • 4 garlic cloves
  • 100ml of extra virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • salt and pepper to taste
  • 100g of fish or chicken fillets

Method

  1. Clean and chop the tomatoes into small pieces, the onions into quarters, and the garlic cloves.
  2. In a preheated pan, add the olive oil and sauté the onions over medium heat until they are translucent.
  3. Add the garlic cloves and cook for a few minutes, then add the tomatoes.
  4. While the tomatoes are cooking, add the balsamic vinegar and season with salt and pepper.
  5. Cook on low heat for about 20-25 minutes, stirring occasionally, until the sauce has thickened.
  6. Add the fish or chicken fillets and cook for another 5-7 minutes.
  7. Serve hot with the fish or chicken fillets on top.
  8. Enjoy your meal!
