A delicious tomato, garlic, and olive oil sauce, traditionally served with fish or chicken, from Naples.

Ingredients
- 200g of ripe tomatoes
- 4 onions
- 4 garlic cloves
- 100ml of extra virgin olive oil
- 1 tablespoon of balsamic vinegar
- salt and pepper to taste
- 100g of fish or chicken fillets
Method
- Clean and chop the tomatoes into small pieces, the onions into quarters, and the garlic cloves.
- In a preheated pan, add the olive oil and sauté the onions over medium heat until they are translucent.
- Add the garlic cloves and cook for a few minutes, then add the tomatoes.
- While the tomatoes are cooking, add the balsamic vinegar and season with salt and pepper.
- Cook on low heat for about 20-25 minutes, stirring occasionally, until the sauce has thickened.
- Add the fish or chicken fillets and cook for another 5-7 minutes.
- Serve hot with the fish or chicken fillets on top.
