A true Neapolitan pizza, crispy and made with the San Gennaro tomato.

Ingredients
- 250 g of durum wheat flour
- 100 g of dry yeast
- 300 ml of room temperature water
- 20 g of salt
- 20 g of olive oil
- 2 San Gennaro tomatoes
- 100 g of buffalo mozzarella
- 1 tablespoon of olive oil
- salt and pepper to taste
- oregano or fresh basil to taste
Method
- In a large bowl, mix the flour, dry yeast, and salt.
- Gradually add the water and olive oil to form a soft, non-sticky dough.
- Cover the bowl with a cloth and let it rise in a warm place for about 1 hour.
- Meanwhile, slice the San Gennaro tomatoes thinly and tear the oregano leaves.
- Prepare the pizza by placing a bit of olive oil in the pan, then spreading the dough.
- Cover the dough with buffalo mozzarella, San Gennaro tomatoes, and oregano leaves.
- Make a central cut and bake at 250°C for 10-12 minutes.
- Serve hot with salt and pepper to taste.
