Piper's Pudding
A traditional Irish dessert, sweet and soft with a crisp crust.

Ingredients
- 250g of wheat flour
- 100g of sugar
- 2 eggs
- 100ml of milk
- 2 tablespoons of butter
- 1 tablespoon of rum
- 1 teaspoon of cinnamon powder
- 1 teaspoon of vanilla powder
- 1 tablespoon of warm water
- 1 tablespoon of caster sugar
- 100g of honey syrup
- 1 tablespoon of fresh cream
Method
- Mix the flour with sugar, cinnamon, and vanilla in a bowl.
- In another bowl, beat the eggs with milk, butter, and rum.
- Gradually mix the liquid ingredients into the dry mixture to form a smooth dough.
- Heat water and sugar to make caramel, then let it cool.
- Make a well in the dough and add the caramel, gently mixing it in.
- Form a ball with the dough and place it in a baking dish.
- Use a spoon to flatten the surface, then sprinkle fresh cream over the top.
- Bake at 180°C for about 45 minutes, until the surface is golden and the dough is soft.
- Let it cool before serving warm.

Piper's Pudding has a history dating back to the 18th century, when it was served as a dessert at celebrations. The recipe has been passed down through generations.
