Ingredients

  • 250g of wheat flour
  • 100g of sugar
  • 2 eggs
  • 100ml of milk
  • 2 tablespoons of butter
  • 1 tablespoon of rum
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of vanilla powder
  • 1 tablespoon of warm water
  • 1 tablespoon of caster sugar
  • 100g of honey syrup
  • 1 tablespoon of fresh cream

Method

  1. Mix the flour with sugar, cinnamon, and vanilla in a bowl.
  2. In another bowl, beat the eggs with milk, butter, and rum.
  3. Gradually mix the liquid ingredients into the dry mixture to form a smooth dough.
  4. Heat water and sugar to make caramel, then let it cool.
  5. Make a well in the dough and add the caramel, gently mixing it in.
  6. Form a ball with the dough and place it in a baking dish.
  7. Use a spoon to flatten the surface, then sprinkle fresh cream over the top.
  8. Bake at 180°C for about 45 minutes, until the surface is golden and the dough is soft.
  9. Let it cool before serving warm.

Piper's Pudding has a history dating back to the 18th century, when it was served as a dessert at celebrations. The recipe has been passed down through generations.
