A classic of Philadelphia cuisine, the Philly Cheesesteak is a crispy and flavorful delight.

Ingredients
- 2 beefsteaks (about 7 oz each)
- 5 oz fresh mozzarella
- 2 onions
- 2 basil leaves
- 2 tablespoons olive oil
- 1 tablespoon ketchup
- Salt and pepper to taste
- 2 hoagie rolls
Method
- Slice the onions thinly and in small rounds.
- In a pan, sauté the onions in a bit of olive oil until they become golden and soft.
- Cut the beefsteaks into small pieces and add them to the pan with ketchup, salt, and pepper. Cook over medium heat until the beef is well done.
- In another pan, toast the hoagie rolls for a few minutes over high heat.
- Assemble the sandwiches with the onion sauce, cooked beef, and cubed mozzarella.
- Serve hot, garnished with basil leaves.
The story
The Philly Cheesesteak traces its origins back to the 1930s when Pat Olivieri, a baker, first served his special sandwich in his shop.
