Peruvian Chaufa
A delicious and colorful dish, Peruvian Chaufa is a local variation of stir-fried rice with vegetables and meats, perfect for a family lunch.

Ingredients
- 150g of basmati rice
- 2 onions
- 1 carrot
- 1 red bell pepper
- 100g of shrimp
- 50g of prawns
- 2 tablespoons of olive oil
- 1 onion
- 2 garlic cloves
- 1 tablespoon of soy sauce
- 1 teaspoon of black pepper
- 1 teaspoon of sugar
Method
- Rinse the rice and let it soak for 10 minutes, then cook it in salted water for about 15 minutes.
- Dice the onions, carrot, and red bell pepper.
- In a non-stick pan, sauté the garlic and olive oil.
- Add the vegetables and sauté for 5 minutes.
- Add the shrimp and prawns, cook for another 3-5 minutes.
- Add the cooked rice, soy sauce, black pepper, and sugar, mix well.
- Serve hot.
