Ingredients

  • 200g of Pecorino Toscano from Pienza
  • 100g of black olives
  • 50g of cooked ham
  • 50g of parsley
  • 100g of Tuscan bread
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Method

  1. Prepare the Tuscan bread by cutting it into small pieces.
  2. Cut the cooked ham into thin strips.
  3. Chop the parsley into small pieces.
  4. Cut the Pecorino Toscano from Pienza into pieces.
  5. In a bowl, mix the Tuscan bread, cooked ham, parsley, and Pecorino Toscano.
  6. Add the extra virgin olive oil and mix well.
  7. Gradually add salt and pepper to taste.
  8. Serve immediately, accompanied by black olives.

The story

The Pecorino Toscano from Pienza dates back to the 1200s, when Cistercian monks introduced the pecorello sheep to the region, bringing with them the cheese-making technique.
