Ingredients

  • 2 kg Norcia sheep's milk cheese
  • 100 g chopped parsley
  • 50 g grated pecorino
  • 2 diced onions
  • 50 ml olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 lemon
  • 100 g fried potatoes
  • 200 ml beef broth

Method

  1. Prepare the beef broth and let it cool.
  2. Cut the Norcia sheep's milk cheese into small pieces and place it in a baking dish.
  3. Add the diced onions, olive oil, salt, and black pepper.
  4. Mix all the ingredients well.
  5. Cook over medium heat for 15-20 minutes, stirring occasionally.
  6. Add the chopped parsley and grated pecorino.
  7. Finally, add the lemon slices and fried potatoes.
  8. Serve hot, accompanied by the beef broth.

The story

The Pecorino di Norcia has a history dating back to the 12th century when Benedictine monks began producing it in the mountains of Norcia, Umbria.
