A hot and spicy mix of mashed vegetables served with the fried bread pav, a classic street food from Mumbai.

Ingredients
- 500g of mixed vegetables (carrots, cauliflower, potatoes, onions)
- 2 cloves of garlic
- 1 red chili pepper
- 1 tablespoon of ghee or butter
- 3 tablespoons of gram flour
- 1/4 cup of peeled and chopped tomatoes
- 2 teaspoons of ground coriander
- 2 teaspoons of ground cumin
- 1 teaspoon of turmeric
- 1 teaspoon of garam masala
- 4 pav breads (fried bread)
Method
- Chop the vegetables into small pieces and sauté them in a pan with some oil. Cook for about 20 minutes until soft.
- Add garlic, chili pepper, and spices (coriander, cumin, turmeric, garam masala). Stir well and cook for another 5-10 minutes.
- In another pan, dissolve the gram flour in hot water to make a smooth paste. Add chopped tomatoes and stir.
- Combine the caramelized vegetables with the gram mixture and cook for 5 minutes, stirring frequently.
- Serve immediately hot with fried pav breads.

Pav Bhaji is a culinary specialty of Mumbai that likely dates back to the 19th century. It originated as a way to use leftover vegetables and has evolved over time, becoming one of the most beloved street foods in Mumbai.
