Paulista Stew

A classic of Paulista cuisine, the virado is a hearty stew packed with flavors and ingredients.

Ingredients
- 2 lbs of beef, cut into pieces
- 1 lb of veal, cut into pieces
- 2 zucchini, cubed
- 1 onion, sliced
- 100 g of shiitake mushrooms, sliced
- 100 g of red bell peppers, sliced
- 100 g of green bell peppers, sliced
- 100 g of yellow bell peppers, sliced
- 200 g of potatoes, cubed
- 200 g of carrots, sliced
- 200 g of red onions, sliced
- 200 g of broccoli, cut into pieces
Method
- In a large pot, sear the beef and veal in a bit of oil.
- Add the onions and sauté for 5 minutes.
- Add the zucchini, mushrooms, bell peppers, potatoes, carrots, red onions, and broccoli.
- Cover with cold water and bring to a boil, then reduce heat and let simmer for 2 hours.
- Serve hot, garnished with sliced red bell peppers.
The story
Virado is a traditional dish that dates back to Portuguese colonization, but it became particularly popular in São Paulo during the 1960s and 1970s.
