Ingredients

  • 400g of durum wheat pasta
  • 150g of fresh sardines
  • 2 onions
  • 2 garlic cloves
  • 1 lemon
  • 100g of bread slices
  • Extra virgin olive oil
  • Salt
  • Red pepper flakes
  • Chopped parsley
  • Grated Parmigiano Reggiano

Method

  1. Clean and cut the sardines, remove the bones and chop them.
  2. In a pan, sauté the onions and garlic in a bit of extra virgin olive oil.
  3. Add the chopped sardines and cook for 5-7 minutes.
  4. Prepare the lemon juice, add salt and red pepper flakes.
  5. In a pot of salted water, cook the pasta al dente.
  6. In a baking dish, place the bread slices, cover with the sardine sauce and add the pasta.
  7. Beat the eggs and mix with the lemon juice, then pour over the pasta.
  8. Before serving, sprinkle with chopped parsley and garnish with grated Parmigiano Reggiano.
