Ingredients

  • 200 g of shrimp
  • 200 g of clams
  • 100 g of oysters
  • 100 g of mussels
  • 1 onion
  • 2 garlic cloves
  • 50 g of red onion
  • 50 ml of palm oil
  • 50 ml of tomato sauce
  • 100 ml of fish stock
  • 100 g of jicama
  • 100 g of red peppers

Method

  1. Clean and chop the seafood and vegetables.
  2. In a pan, sauté the garlic and palm oil.
  3. Add the onion and red onion, sauté for 2 minutes.
  4. Add the seafood and vegetables, cook for 5 minutes.
  5. Add the tomato sauce and fish stock, stir well.
  6. Cook for another 5 minutes on medium heat.
  7. Add the jicama and red peppers, cook for 2 minutes.
  8. Serve hot.

The story

Parihuela is a traditional Peruvian dish from the Ica region, which gained popularity in the 19th century due to local sailors who prepared it with local seafood.
