A traditional appetizer from the Trás-os-Montes region in Portugal, Papas de Sarrabulho is a delicious dish made with potatoes and pork meat.

Ingredients
- 500g of potatoes
- 300g of pork meat
- 2 onions
- 2 garlic cloves
- 500ml of pork broth
- 50g of thyme
- salt and pepper to taste
- extra virgin olive oil
Method
- Peel and cut the potatoes into cubes. Boil in salted water for about 10 minutes until tender.
- Cut the pork meat into small pieces and fry in a pan with olive oil until golden brown.
- Add the onions and garlic, sauté for a few minutes.
- Add the pork broth and thyme, bring to a boil and let cook for 20-25 minutes.
- In a baking dish, layer the potatoes and cover with the meat sauce. Cover and bake in the oven at 180°C for 30-40 minutes.
- Serve hot, seasoned with salt and pepper to taste.
