Ingredients
- chickpea flour
- water
- sea salt
- sesame oil
- pearl millet
- red chili flakes
- ginger powder
Method
- Place the chickpea flour in a large container and gradually add water while stirring until you have a smooth paste.
- Add sea salt and continue kneading until you get a smooth dough without lumps.
- Divide the dough into small balls and spread them out thinly with a sharp knife to form discs.
- Let the discs dry on a cotton cloth or rack for at least 2 hours.
- Before use, toast the papads quickly in a pan with some sesame oil until they become crispy.
