A classic dish from KwaZulu-Natal, Pap and Klapper is a hearty and nutritious soup.

Ingredients
- 400 g of cornmeal
- 3 liters of chicken broth
- 1 onion
- 2 carrots
- 2 spring onions
- 1 tablespoon of olive oil
- 1 green pepper
- 1 tomato
- Salt and pepper to taste
- 1 teaspoon of chili
- 1 tablespoon of ginger
- 1 tablespoon of coriander
- 1 tablespoon of fried onion
Method
- In a pot, mix the cornmeal with the warm chicken broth until you get a smooth paste.
- Add the olive oil and fried onion, stirring well.
- Chop the onion, carrots, green pepper, and tomato into cubes.
- Add the vegetables to the pot and stir well.
- Bring to a boil and cook for 20-25 minutes, seasoning with salt and pepper.
- In another pot, cook the coriander and chili in a bit of oil.
- Pour the coriander and chili into the soup and stir.
- Serve hot, garnished with fried spring onions.
