A rich and delicious zucchini frittata with crispy zucchinis, traditionally served in the Padua region.

Ingredients

  • 4 zucchinis
  • 500g of Grana Padano cheese
  • 3 eggs
  • 100g of cooked ham
  • 1 onion
  • 200g of tomatoes
  • salt and pepper to taste
  • extra virgin olive oil

Method

  1. Slice the zucchinis thinly and salt them for 10 minutes, then pat dry with paper towels.
  2. Slice the ham into thin strips and the onion into slices.
  3. In a non-stick pan, sauté the onion in a little extra virgin olive oil.
  4. Add the zucchinis and sauté for 5 minutes, then add the cubed tomatoes.
  5. In a bowl, beat the eggs, add the Grana Padano cheese, salt, and pepper.
  6. Add the egg and cheese mixture to the pan with the zucchinis and tomatoes, gently mix.
  7. Form a pie in the pan and sprinkle with the cooked ham.
  8. Cook for 10-15 minutes until the frittata is golden and the crust is crispy.
  9. Serve hot, cut into slices.

The zucchini frittata is a Paduan specialty with origins dating back to the Renaissance period, when luxurious ingredients like zucchinis were used to prepare sumptuous dishes.
