A delicious and warming dish, Oden is a Tokyo specialty that combines various ingredients in a soffritto-infused broth.

Ingredients

  • 200g of onion, diced
  • 200g of potatoes, diced
  • 150g of sausage, sliced
  • 100g of salted cod, diced
  • 200ml of chicken broth
  • 100ml of sake
  • 50ml of onion soffritto
  • 2 tablespoons of soy sauce
  • 2 tablespoons of cherry jam
  • 2 eggs
  • 100g of tofu
  • 100g of shrimp, diced

Method

  1. In a large pot, sauté the onion in a bit of olive oil until it turns golden.
  2. Add the chicken broth, sake, and onion soffritto, bring to a boil and let it simmer for 10 minutes.
  3. Add the potatoes, sausage, salted cod, tofu, and shrimp, cover and let it simmer for another 15-20 minutes.
  4. In a bowl, mix the soy sauce and cherry jam.
  5. Boil the eggs in salted water for 6-7 minutes, then cut them in half.
  6. Serve the hot broth with the various ingredients on top and season with the soy sauce and cherry jam.
  7. Place the half-boiled eggs on top of the various ingredients for a colorful and tasty touch.

The story

Originating in the 19th century, Oden became popular across Japan in the 20th century, particularly in Tokyo, where a wide variety of variations can be found.
