Oat Tagine

A delightful oat tagine, a traditional Moroccan dish made with cereals and fruits, perfect for a warm and nutritious meal.

Ingredients
- 200g of whole oat groats
- 200g of sesame seeds
- 100g of almonds
- 100g of apricots
- 50g of cane sugar
- 50g of saffron
- 300ml of water
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- salt to taste
- 1 bay leaf
- 1 tablespoon of apricot paste
Method
- In a large pan, mix the whole oat groats with olive oil and lemon juice. Add the almonds and chopped apricots. Cook for 5-7 minutes over medium heat.
- Add water, salt, cane sugar, and saffron. Stir well and bring to a boil.
- Cover the pan and reduce the heat. Cook for 20-25 minutes, stirring occasionally, until the oat groats are soft and the sauce is abundant.
- Add the sesame oil and apricot paste. Stir well and cook for another 5-7 minutes.
- Finally, add the bay leaf and let it infuse for 5 minutes before serving.
