Ingredients

  • 200g of whole oat groats
  • 200g of sesame seeds
  • 100g of almonds
  • 100g of apricots
  • 50g of cane sugar
  • 50g of saffron
  • 300ml of water
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • salt to taste
  • 1 bay leaf
  • 1 tablespoon of apricot paste

Method

  1. In a large pan, mix the whole oat groats with olive oil and lemon juice. Add the almonds and chopped apricots. Cook for 5-7 minutes over medium heat.
  2. Add water, salt, cane sugar, and saffron. Stir well and bring to a boil.
  3. Cover the pan and reduce the heat. Cook for 20-25 minutes, stirring occasionally, until the oat groats are soft and the sauce is abundant.
  4. Add the sesame oil and apricot paste. Stir well and cook for another 5-7 minutes.
  5. Finally, add the bay leaf and let it infuse for 5 minutes before serving.
