A classic of New Orleans cuisine, the po' boy sandwich is a delightful combination of bread and filling.

Ingredients
- 240 g of New Orleans bread
- 200 g of fried chicken
- 100 g of marinated tomatoes
- 50 g of red onion
- 50 g of cucumber
- 40 g of provolone cheese
- 40 g of lettuce
- 2 tablespoons of tomato sauce
- oil and salt to taste
Method
- Prepare the New Orleans bread by slicing it in half lengthwise.
- Fry the chicken and cut it into thin slices.
- Slice the onion, red onion, and cucumber thinly.
- Assemble the sandwich with the fried chicken, marinated tomatoes, onion, red onion, cucumber, and provolone cheese.
- Add the lettuce and tomato sauce on top.
- Finally, add a bit of oil and salt to taste.
- Serve hot.
The story
The po' boy sandwich originated in the 1930s during the Great Depression in New Orleans, when a local baker offered free sandwiches to railroad workers.
