Ingredients

  • 400g of potato vermicelli
  • 300ml of cold chicken broth
  • 4 onions
  • 1 chili pepper
  • 2 tablespoons of soy sauce
  • 1 tablespoon of tomato sauce
  • 2 tablespoons of sesame oil
  • 1 tablespoon of sugar
  • 1 tablespoon of rice vinegar
  • Salt to taste
  • 100g of fresh vegetables (zucchini, carrots, onions)
  • 200g of beef or chicken (optional)

Method

  1. Boil the potato vermicelli in salted water for 3-4 minutes, then cool under cold water.
  2. Prepare the sauce by mixing soy sauce, sesame oil, salt, sugar, rice vinegar, and tomato sauce together.
  3. Chop the onions and chili pepper into cubes, then sauté in a bit of sesame oil.
  4. Add the meat (if used) and cook for 5-7 minutes.
  5. Add the cold chicken broth and let it boil for 2-3 minutes.
  6. Arrange the vermicelli in a bowl, add the sauce and sliced vegetables.
  7. Serve cold, garnishing with sliced chili pepper.

The story

Naengmyeon has ancient origins in North Korea, with special significance in the Sinuiju region, where it has become a traditional dish.
