Naengmyeon (냉면)

A refreshing and light dish, Naengmyeon is a cold noodle delicacy made from potato vermicelli and garlic sauce.

Ingredients
- 400g of potato vermicelli
- 300ml of cold chicken broth
- 4 onions
- 1 chili pepper
- 2 tablespoons of soy sauce
- 1 tablespoon of tomato sauce
- 2 tablespoons of sesame oil
- 1 tablespoon of sugar
- 1 tablespoon of rice vinegar
- Salt to taste
- 100g of fresh vegetables (zucchini, carrots, onions)
- 200g of beef or chicken (optional)
Method
- Boil the potato vermicelli in salted water for 3-4 minutes, then cool under cold water.
- Prepare the sauce by mixing soy sauce, sesame oil, salt, sugar, rice vinegar, and tomato sauce together.
- Chop the onions and chili pepper into cubes, then sauté in a bit of sesame oil.
- Add the meat (if used) and cook for 5-7 minutes.
- Add the cold chicken broth and let it boil for 2-3 minutes.
- Arrange the vermicelli in a bowl, add the sauce and sliced vegetables.
- Serve cold, garnishing with sliced chili pepper.
The story
Naengmyeon has ancient origins in North Korea, with special significance in the Sinuiju region, where it has become a traditional dish.
