  • 1 red onion, sliced
  • 2 garlic cloves, crushed
  • 200 ml of white wine
  • 200 ml of legume broth
  • 100 g of wild mushrooms, sliced
  • 100 g of potatoes, cubed
  • 100 g of cauliflower, cut into pieces
  • salt and pepper to taste

Method

  1. In a casserole, heat the oil and sauté the garlic, onion, and red onion.
  2. Add the mutton pieces and cook for a few minutes.
  3. Add the carrot cubes, white wine, and meat broth, bringing to a boil.
  4. Cover and simmer on low heat for about 1 hour, adding water if necessary.
  5. Add the mushrooms, potatoes, and cauliflower, and cook for another 20-30 minutes or until tender.
  6. Check the seasoning and adjust if needed.
  7. Serve hot, garnished with chopped parsley.
