Ingredients

  • 400 grams of mussels
  • 200 grams of canned tomatoes
  • 1 onion
  • 2 cloves of garlic
  • 200 ml of white wine
  • 50 grams of butter
  • 50 grams of flour
  • 100 ml of fish stock
  • 1 teaspoon of red pepper flakes
  • Salt and pepper to taste
  • 200 grams of tostones (crispy bread slices)

Method

  1. Rinse the mussels thoroughly and remove the beards.
  2. In a pan, sauté the garlic and onion in a bit of butter.
  3. Add the canned tomatoes and cook over medium heat for 10 minutes.
  4. In a separate bowl, mix the flour with fish stock.
  5. Add the sautéed tomato mixture and white wine, stirring well.
  6. Bring to a boil and cook for 5 minutes, adding salt and pepper to taste.
  7. In a bowl, mix the mussels with the sauce.
  8. Serve with crispy tostones on top.
