Ingredients

  • 200 g of potatoes
  • 100 g of carrots
  • 100 g of onions
  • 2 eggs
  • 50 g of grated cheese
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 2 basil leaves
  • 1 tablespoon of chopped parsley

Method

  1. Peel and dice the potatoes, carrots, and onions into cubes.
  2. In a pan, heat the olive oil and sauté the onions until they turn golden.
  3. Add the carrots and potatoes, and cook over medium heat for about 10 minutes.
  4. In another bowl, mix the eggs, grated cheese, basil, and parsley.
  5. Add the vegetable mixture and mix well.
  6. Form small balls with the vegetable dough.
  7. Cook in a non-stick pan with oil on medium heat for 3-4 minutes on each side, until they become crispy.
  8. Serve hot, seasoned with salt and pepper to taste.
