Ingredients

  • 200g of soybeans
  • 100g of rice
  • 2 onions
  • 2 garlic cloves
  • 200g of chickpeas
  • 100g of soy
  • 300g of zucchini
  • olive oil
  • salt
  • pepper

Method

  1. Rinse the soybeans and rice thoroughly, then cook the rice in plenty of salted water for about 15 minutes.
  2. In a pot, cook the soybeans and chickpeas with a little water and salt for about 30-40 minutes.
  3. Slice the onions and garlic cloves.
  4. In a pan, sauté the onions and garlic in a bit of olive oil.
  5. Add the soybeans and chickpeas, stirring well.
  6. In a baking dish, layer the beans, rice, and sliced zucchini.
  7. Sprinkle with olive oil, salt, and pepper.
  8. Bake for 20-25 minutes at 180°C.
