Mrouzia (Tagine with Almonds, Honey, and Cinnamon)

A traditional Moroccan tagine, rich in sweetness and fragrance, made with almonds, honey, and cinnamon.

Ingredients
- 200g of beef or lamb, cut into pieces
- 400g of almonds
- 100g of cane sugar
- 200ml of water
- 100g of honey
- 3-4 tablespoons of ground cinnamon
- 1 onion, cubed
- 1 chili pepper
- 1 lemon, zested
- Salt to taste
- Extra virgin olive oil for frying
- 100g of toasted and crushed almonds
Method
- In a bowl, fry the almonds in oil until golden brown, then let them cool.
- In a pot, add water, salt, and cubed onion. Bring to a boil.
- Add the meat, chili pepper, and zest of the lemon. Cook for 20 minutes.
- In another bowl, mix the cane sugar, water, and honey. Bring to a boil.
- Add the meat to the sugar solution and boil for 10 minutes. Add ground cinnamon.
- Pour the mixture into the pot with the meat and cook for 30 minutes.
- In a pan, fry the toasted and crushed almonds. Add them to the mrouzia and serve hot.
The story
Mrouzia is a traditional dish from Tangier, prepared during religious festivals to celebrate the end of Ramadan. The recipe was brought to Morocco by merchants traveling the Silk Road.
