Moules-frites
A classic Belgian dish, mussels fried with crispy french fries.

Ingredients
- 400g of mussels
- 1 kg of potatoes
- 2 onions
- 200g of butter
- 100g of olive oil
- Salt and pepper to taste
- 1 tablespoon of white wine vinegar
- 1 tablespoon of chopped onion
- 1 tablespoon of chopped parsley
Method
- Clean and debeard the mussels, then rinse them in cold salted water.
- Slice the potatoes thinly, soak them in cold salted water for 30 minutes.
- In a large pan, sauté the olive oil and onion until golden.
- Add the potato slices and cook over medium heat for 15-20 minutes, checking for doneness.
- In the same pan, add the butter, white wine vinegar, chopped onion, and parsley.
- Add the mussels, cover, and cook over medium heat for 5-7 minutes.
- Serve immediately with the crispy french fries.
