Moroccan Potato Sausage

A delicious Casablanca-inspired dish that combines cooked potatoes and Moroccan sausage in one meal.

Ingredients
- 2 kg of potatoes
- 500 g of Moroccan sausage
- 2 onions
- 2 garlic cloves
- 2 tablespoons of extra virgin olive oil
- 1 lemon
- salt and pepper to taste
- 1 tablespoon of ground cumin
- 1 tablespoon of ground ginger
- 1 tablespoon of cayenne pepper
- 1 tablespoon of ground coriander
Method
- Peel and cut the potatoes into cubes. Cook in salted water until soft.
- In a pan, sauté the onions and garlic in extra virgin olive oil.
- Add the Moroccan sausage, cut into pieces, and sauté until well cooked.
- Layer the cooked potatoes over the sausage in a large pan or casserole, add the cumin, cayenne pepper, coriander, salt, and pepper, and mix well.
- Cook on low heat, covered, for about 30 minutes, stirring occasionally, until the potatoes are fully absorbed and the sauce is thick.
- Add lemon juice and mix well to combine the flavors.
- Serve hot, garnished with a sprinkle of ground coriander.
