Ingredients

  • 2 kg of potatoes
  • 500 g of Moroccan sausage
  • 2 onions
  • 2 garlic cloves
  • 2 tablespoons of extra virgin olive oil
  • 1 lemon
  • salt and pepper to taste
  • 1 tablespoon of ground cumin
  • 1 tablespoon of ground ginger
  • 1 tablespoon of cayenne pepper
  • 1 tablespoon of ground coriander

Method

  1. Peel and cut the potatoes into cubes. Cook in salted water until soft.
  2. In a pan, sauté the onions and garlic in extra virgin olive oil.
  3. Add the Moroccan sausage, cut into pieces, and sauté until well cooked.
  4. Layer the cooked potatoes over the sausage in a large pan or casserole, add the cumin, cayenne pepper, coriander, salt, and pepper, and mix well.
  5. Cook on low heat, covered, for about 30 minutes, stirring occasionally, until the potatoes are fully absorbed and the sauce is thick.
  6. Add lemon juice and mix well to combine the flavors.
  7. Serve hot, garnished with a sprinkle of ground coriander.
