Ingredients

  • 500 g of lamb loin
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons of paprika powder
  • 1 teaspoon of ginger powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of red pepper
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil
  • 1 lemon
  • 100 g of almonds

Method

  1. Take the lamb loin and cut it into thick slices.
  2. In a bowl, mix the onions, garlic, paprika powder, ginger powder, cumin, red pepper, black pepper, and salt.
  3. Add the olive oil and lemon juice to the spice mixture.
  4. Dip the slices of lamb in the spice mixture for about 30 minutes.
  5. Preheat the oven to 200°C and place the slices of lamb on a baking tray.
  6. Sprinkle with the remaining lemon juice and add the almonds.
  7. Bake in the oven for 20-25 minutes, or until the slices are crispy.
  8. Serve hot with a mixed lettuce salad or with a pilaf rice.

The story

Moroccan lamb loin was brought to Italy through trade and slave trade along the Mediterranean coast, becoming a popular dish in various regions of the country.
