Moroccan Lamb
A delicious Moroccan-style roasted lamb loin, fragrant with aromatic spices, crispy and full of flavor.

Ingredients
- 500 g of lamb loin
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 tablespoons of paprika powder
- 1 teaspoon of ginger powder
- 1 teaspoon of cumin powder
- 1 teaspoon of red pepper
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 2 tablespoons of olive oil
- 1 lemon
- 100 g of almonds
Method
- Take the lamb loin and cut it into thick slices.
- In a bowl, mix the onions, garlic, paprika powder, ginger powder, cumin, red pepper, black pepper, and salt.
- Add the olive oil and lemon juice to the spice mixture.
- Dip the slices of lamb in the spice mixture for about 30 minutes.
- Preheat the oven to 200°C and place the slices of lamb on a baking tray.
- Sprinkle with the remaining lemon juice and add the almonds.
- Bake in the oven for 20-25 minutes, or until the slices are crispy.
- Serve hot with a mixed lettuce salad or with a pilaf rice.
The story
Moroccan lamb loin was brought to Italy through trade and slave trade along the Mediterranean coast, becoming a popular dish in various regions of the country.
