Ingredients

  • 200g of couscous
  • 200g of vegetables (carrots, potatoes, onions)
  • 100g of leafy vegetables (spinach, leeks)
  • 500g of beef (or chicken)
  • 200ml of olive oil
  • 2 tablespoons of saffron
  • 1 lemon
  • Salt and pepper to taste
  • 1 liter of beef broth
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of semolina

Method

  1. In a pot, sauté the chopped vegetables with olive oil and salt.
  2. Add the cubed meat and cook until well done.
  3. In another pot, cook the couscous according to the package instructions, adding boiling broth.
  4. In a bowl, mix the saffron with apple cider vinegar and salt.
  5. While the couscous is cooling, add the leafy vegetables and beef broth.
  6. Once the couscous is ready, gently mix the vegetables and meat on top.
  7. Finally, pour the saffron and semolina sauce over it, mixing well.
  8. Serve hot and enjoy!

The story

Moroccan couscous has a long history dating back to the 10th century when the Moors introduced it to Morocco, bringing it from North Africa.
