Moroccan Couscous

A delicious Moroccan couscous, rich in aromas and flavors.

Ingredients
- 200g of couscous
- 200g of vegetables (carrots, potatoes, onions)
- 100g of leafy vegetables (spinach, leeks)
- 500g of beef (or chicken)
- 200ml of olive oil
- 2 tablespoons of saffron
- 1 lemon
- Salt and pepper to taste
- 1 liter of beef broth
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of semolina
Method
- In a pot, sauté the chopped vegetables with olive oil and salt.
- Add the cubed meat and cook until well done.
- In another pot, cook the couscous according to the package instructions, adding boiling broth.
- In a bowl, mix the saffron with apple cider vinegar and salt.
- While the couscous is cooling, add the leafy vegetables and beef broth.
- Once the couscous is ready, gently mix the vegetables and meat on top.
- Finally, pour the saffron and semolina sauce over it, mixing well.
- Serve hot and enjoy!
The story
Moroccan couscous has a long history dating back to the 10th century when the Moors introduced it to Morocco, bringing it from North Africa.
