A traditional Aosta Valley appetizer made with fresh shrimp and a spicy seasoning.

Ingredients
- 200 g of fresh shrimp
- 2 onions
- 2 garlic cloves
- 50 g of fresh parsley
- 100 ml of extra virgin olive oil
- 100 ml of dry white wine
- 1 tablespoon of red pepper flakes
- 100 ml of fish broth
- salt and pepper to taste
Method
- Clean and cut the shrimp, keeping the tail.
- In a pan, heat the oil and the garlic until the garlic is golden.
- Add the chopped onions and cook for about 5 minutes.
- Add the shrimp and cook for 2-3 minutes on each side.
- Pour in the wine and broth, add the red pepper flakes, and let it boil for 2-3 minutes.
- Add the chopped parsley and cook for an additional 2-3 minutes.
- Place the onion tops over the shrimp.
- Serve immediately in a warm dish.
The story
Mjotsa is a local specialty from Sesana in the Aosta Valley, tracing its origins back to the fishing traditions of the local fishermen.
