Ingredients

  • 4 sweet potatoes, cubed
  • 2 onions, sliced
  • 2 eggs
  • 100 g feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon kashk (yogurt and milk preparation)
  • Salt and pepper to taste
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh parsley, chopped

Method

  1. In a large pan, sauté the sliced onions in olive oil for a few minutes.
  2. Add the sweet potato cubes and sauté for about 10 minutes, until they are soft.
  3. In a bowl, mix the eggs, feta cheese, white wine vinegar, apple cider vinegar, and kashk together.
  4. Pour the egg mixture over the sweet potatoes, mix well, and let it rest for 10 minutes.
  5. Top with chopped mint and parsley, serve with pita or rice.
  6. Tasty and ready to be enjoyed!

The story

Khoresht-e Mirza Ghasemi originated in Tehran, Iran, in the 19th century as a way to use up excess eggs. It was a popular dish among the poor and workers.
