A classic of Iranian cuisine, Khoresht-e Mirza Ghasemi is a delicious stew made with sweet potatoes, onions, and eggs, traditionally served with pita or rice.

Ingredients
- 4 sweet potatoes, cubed
- 2 onions, sliced
- 2 eggs
- 100 g feta cheese
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon apple cider vinegar
- 1 tablespoon kashk (yogurt and milk preparation)
- Salt and pepper to taste
- 1 tablespoon fresh mint, chopped
- 1 tablespoon fresh parsley, chopped
Method
- In a large pan, sauté the sliced onions in olive oil for a few minutes.
- Add the sweet potato cubes and sauté for about 10 minutes, until they are soft.
- In a bowl, mix the eggs, feta cheese, white wine vinegar, apple cider vinegar, and kashk together.
- Pour the egg mixture over the sweet potatoes, mix well, and let it rest for 10 minutes.
- Top with chopped mint and parsley, serve with pita or rice.

The story
Khoresht-e Mirza Ghasemi originated in Tehran, Iran, in the 19th century as a way to use up excess eggs. It was a popular dish among the poor and workers.
