Ingredients
- 4 beef or veal cutlets
- 2 eggs
- 500 g of crushed bread
- 200 g of mozzarella cheese
- 2 onions
- oil for frying
- salt and pepper
- 1 can of tomatoes
- 100 g of chopped parsley
- 100 g of chopped basil
Method
- Prepare the batter: mix the eggs with finely chopped crushed bread, salt, and pepper.
- In a bowl, separate the cutlets into two halves and dip them in the batter.
- Fry the cutlets in plenty of olive oil until golden brown.
- In another bowl, mix the mozzarella cheese, chopped onions, canned tomatoes, parsley, and basil.
- Place the fried cutlets with the cheese and vegetable mixture on a rectangular tray, wrapping them up.
- Fry the rolls in hot oil until golden brown.
- Serve hot with a tomato and basil salad.
