Ingredients

  • 4 beef or veal cutlets
  • 2 eggs
  • 500 g of crushed bread
  • 200 g of mozzarella cheese
  • 2 onions
  • oil for frying
  • salt and pepper
  • 1 can of tomatoes
  • 100 g of chopped parsley
  • 100 g of chopped basil

Method

  1. Prepare the batter: mix the eggs with finely chopped crushed bread, salt, and pepper.
  2. In a bowl, separate the cutlets into two halves and dip them in the batter.
  3. Fry the cutlets in plenty of olive oil until golden brown.
  4. In another bowl, mix the mozzarella cheese, chopped onions, canned tomatoes, parsley, and basil.
  5. Place the fried cutlets with the cheese and vegetable mixture on a rectangular tray, wrapping them up.
  6. Fry the rolls in hot oil until golden brown.
  7. Serve hot with a tomato and basil salad.
