Midye Tava

A dish of smoked fish and crispy rice, typical of the storytelling cuisine of Istanbul.

Ingredients
- 200 g of smoked fish, sliced into strips
- 400 g of rice
- 50 g of butter
- 50 g of olive oil
- 2 onions, finely chopped
- 100 g of zucchini, sliced
- 100 g of tomatoes, sliced
- 50 g of cooked lentils
- 100 g of bulgur
- Salt and pepper to taste
- Water for cooking rice
Method
- In a pan, fry the smoked fish strips in butter and olive oil for 5-7 minutes until they become crispy.
- Add the chopped onions and cook for 3-4 minutes until they turn golden.
- Add the zucchini and tomatoes, cook for another 5-7 minutes until the vegetables are slightly dried out.
- In another pan, cook the rice with water and salt until it's al dente.
- Combine the cooked rice with the fish and vegetables, add the boiled lentils and bulgur, mix well.
- Arrange the Midye Tava in a serving dish, garnish with sliced tomatoes.
- Serve hot, accompanied by a sweet red wine.
The story
Midye Tava is a specialty of Turkish cuisine, particularly popular in Istanbul. Originally prepared with midye, small sea snails, today it is usually made with smoked fish.
