Ingredients

  • 2 kg of pork head meat
  • 2 onions
  • 2 red bell peppers
  • 100 g of anchovies
  • 100 g of yellow onions
  • 100 g of green bell peppers
  • 500 ml of chicken broth
  • 200 ml of white wine vinegar
  • 1 tablespoon of chili powder
  • 1 tablespoon of dried chili
  • 100 g of chopped onion
  • 100 g of chopped red bell pepper

Method

  1. Chop the onions, bell peppers, and red bell peppers and set aside.
  2. In a large pot, add the chicken broth and chili powder.
  3. Add the pork head meat and bring to a boil.
  4. Cook on medium heat for 2 hours, adding water as needed to maintain an appropriate level.
  5. Add the anchovies, yellow bell peppers, yellow onions, green bell peppers, white wine vinegar, dried chili, and chopped onion.
  6. Cook for an additional 30 minutes until the pork head meat is completely tender.
  7. Serve hot with chopped chili on top.
