A delicious, hot broth made with pork head meat, onions, peppers, and spices, typical of the Guerrero region in Mexico.

Ingredients
- 2 kg of pork head meat
- 2 onions
- 2 red bell peppers
- 100 g of anchovies
- 100 g of yellow onions
- 100 g of green bell peppers
- 500 ml of chicken broth
- 200 ml of white wine vinegar
- 1 tablespoon of chili powder
- 1 tablespoon of dried chili
- 100 g of chopped onion
- 100 g of chopped red bell pepper
Method
- Chop the onions, bell peppers, and red bell peppers and set aside.
- In a large pot, add the chicken broth and chili powder.
- Add the pork head meat and bring to a boil.
- Cook on medium heat for 2 hours, adding water as needed to maintain an appropriate level.
- Add the anchovies, yellow bell peppers, yellow onions, green bell peppers, white wine vinegar, dried chili, and chopped onion.
- Cook for an additional 30 minutes until the pork head meat is completely tender.
- Serve hot with chopped chili on top.
