A classic of Marche cuisine, sugo alla marchigiana is a delicious tomato sauce with a hint of cooked prosciutto and olive oil.

Ingredients

  • 400g of marinated tomatoes
  • 200g of cooked prosciutto
  • 500g of meat sauce
  • 2 tablespoons of olive oil
  • 1 onion
  • 1 garlic clove
  • 100g of beans
  • salt and pepper to taste
  • 100g of fresh basil
  • 100g of pecorino romano cheese

Method

  1. In a pan, sauté the garlic and onion in a tablespoon of olive oil.
  2. Add the marinated tomatoes and meat sauce, stir and let cook for 20-25 minutes.
  3. Cut the cooked prosciutto into thin strips and add it to the sauce.
  4. Season with salt and pepper, then add the beans and stir.
  5. Finally, add the basil and pecorino romano cheese, stir and let cook for another 5 minutes.
  6. Serve hot over pasta plates.
