Marche-style Tomato Sauce

A classic of Marche cuisine, sugo alla marchigiana is a delicious tomato sauce with a hint of cooked prosciutto and olive oil.

Ingredients
- 400g of marinated tomatoes
- 200g of cooked prosciutto
- 500g of meat sauce
- 2 tablespoons of olive oil
- 1 onion
- 1 garlic clove
- 100g of beans
- salt and pepper to taste
- 100g of fresh basil
- 100g of pecorino romano cheese
Method
- In a pan, sauté the garlic and onion in a tablespoon of olive oil.
- Add the marinated tomatoes and meat sauce, stir and let cook for 20-25 minutes.
- Cut the cooked prosciutto into thin strips and add it to the sauce.
- Season with salt and pepper, then add the beans and stir.
- Finally, add the basil and pecorino romano cheese, stir and let cook for another 5 minutes.
- Serve hot over pasta plates.
