  • 300 ml of sugar
  • 150 ml of Vermontville steel maple syrup
  • 100 ml of water
  • 1 tablespoon of lemon juice
  • 200 g of sesame seeds
  • Mint leaves (for decoration)
  • Ice cubes (for serving)

Method

  1. Melt the sugar, Vermontville steel maple syrup, and water in a pan over medium heat until the mixture is completely liquid.
  2. Add the lemon juice and stir well.
  3. Bring the mixture to a boil and continue stirring for 5 minutes.
  4. Turn off the heat and add the sesame seeds, stirring quickly.
  5. Pour the mixture onto a frozen surface and let it cool.
  6. When it is cold, press the caramel with a spoon or fork.
  7. Decorate with mint leaves and serve directly on the ice.

The story

Maple taffy, a local specialty of Vermontville, Quebec, traces its origins to the 1930s when rabbit hunters, looking for a way to share their sugar with local families, discovered they could melt it with water and maple syrup, then cool and crush the candy on ice.
