Ingredients

  • 400 g of cod liver
  • 250 ml extra virgin olive oil
  • 1 large red onion
  • 3 garlic cloves
  • salt to taste
  • red hot chili pepper to taste

Method

  1. Drain the cod liver thoroughly and let it drain for at least an hour.
  2. Slice the red onion into thin rounds and mince the garlic cloves.
  3. In a non-stick pan, sauté the vegetables in extra virgin olive oil over medium-high heat for about 15 minutes until they are soft but still slightly crisp.
  4. Add the cod liver and continue cooking for another 10-12 minutes, stirring frequently to prevent sticking.
  5. Once cooked, transfer the mixture into a blender or immersion blender and blend until smooth.

The story

Baccalà Mantecato originates from the ancient maritime traditions of Venice. Originally served as a snack for fishermen during long days at sea, it has now become an ally in Venetian cuisine.
