Mantecato Cod Liver Spread

Ingredients
- 400 g of cod liver
- 250 ml extra virgin olive oil
- 1 large red onion
- 3 garlic cloves
- salt to taste
- red hot chili pepper to taste
Method
- Drain the cod liver thoroughly and let it drain for at least an hour.
- Slice the red onion into thin rounds and mince the garlic cloves.
- In a non-stick pan, sauté the vegetables in extra virgin olive oil over medium-high heat for about 15 minutes until they are soft but still slightly crisp.
- Add the cod liver and continue cooking for another 10-12 minutes, stirring frequently to prevent sticking.
- Once cooked, transfer the mixture into a blender or immersion blender and blend until smooth.
The story
Baccalà Mantecato originates from the ancient maritime traditions of Venice. Originally served as a snack for fishermen during long days at sea, it has now become an ally in Venetian cuisine.
