Mansaf
Mansaf is a traditional Lebanese dish, rich and exquisite, served with rice and slowly cooked beef.

Ingredients
- 1 kg of beef in pieces
- 2 liters of beef broth
- 1 onion
- 2 garlic cloves
- 200 g of rice
- 100 g of almonds
- 100 g of yogurt
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1 teaspoon of saffron
- 1 teaspoon of turmeric
- 1 teaspoon of ground ginger
Method
- Chop the garlic and onion and sauté them in a pan with olive oil until they turn golden.
- Add the beef and cook until well done.
- In a pot, mix the beef broth, salt, pepper, turmeric, and ginger. Bring to a boil.
- Add the beef and broth to the pan with the garlic and onion, reduce the heat, and let it cook for 1 hour.
- Meanwhile, prepare the rice: mix the rice with water, salt, and saffron. Bring to a boil, reduce the heat, and cook for 15 minutes.
- In a bowl, blend the almonds with the yogurt.
- Serve the beef with the rice and coat it with the broth and almond and yogurt mixture.
The story
Mansaf is a culinary tradition that dates back to the time of the Bedouins. It is said to have been first served during the Battle of Yarmouk in 636 AD.
