A traditional Nigerian dish, Maggi Amala is a delightful combination of crunchy and soft fufu served with a flavorful sauce.

Ingredients
- 200g of sweet potatoes
- 200g of cornmeal
- 1 tablespoon of Maggi
- 1 onion
- 200ml of water
- 1 tablespoon of oil
- Salt to taste
- 1 tablespoon of Guinea pepper
- 200g of chopped vegetables (for the sauce)
- 1 tablespoon of chili
- 2 tablespoons of oil
- 2 slices of garlic
Method
- Peel and cut the sweet potatoes into small pieces.
- In a pot, cook the sweet potatoes in salted water for about 20 minutes, until they are soft.
- In another pot, mix the cornmeal with water and Maggi, bringing to a boil and reducing heat.
- Add the cooked sweet potatoes and Guinea pepper, mixing well.
- Cook for another 10-15 minutes, stirring occasionally, until the cornmeal is soft and smooth.
- In a pan, sauté the garlic and oil, then add the chopped vegetables and cook for 5-7 minutes.
- Add the chili and continue cooking for another 2-3 minutes.
- Serve the amala with the sauce on top, and enjoy hot.

Originating from the southeastern part of Nigeria, Amala is a sweet dish that has been modernized with the addition of Maggi, a popular seasoning, creating a popular and accessible dish nationwide.
