Ingredients

  • 500 g of chickpeas
  • 200 g of mixed vegetables (zucchini, onions, bell peppers)
  • 100 g of pork or beef
  • 200 ml of palm oil
  • 2 tablespoons of Guinea pepper
  • 2 tablespoons of Senegal pepper
  • 2 tablespoons of cayenne pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 liter of meat broth
  • Salt to taste
  • 1 tablespoon of beef vinegar

Method

  1. Rinse the chickpeas and cook them in boiling water for 10 minutes, then cool them under cold water.
  2. Dice the vegetables and meat into small pieces.
  3. In a large pot, heat the palm oil and sauté the garlic and onion.
  4. Add the meat and vegetables, sauté for 5 minutes.
  5. Add the peppers, meat broth, and spices, bringing to a boil.
  6. Cook on medium heat for 30 minutes, adding the chickpeas and salt.
  7. Finally, add the beef vinegar and mix well.
  8. Serve hot with bread.

Mafe has roots that date back to pre-colonial times in Senegal, where it was a popular dish among peasants.
