A traditional Senegalese dish, Mafe is a delicious stew of chickpeas and vegetables.

Ingredients
- 500 g of chickpeas
- 200 g of mixed vegetables (zucchini, onions, bell peppers)
- 100 g of pork or beef
- 200 ml of palm oil
- 2 tablespoons of Guinea pepper
- 2 tablespoons of Senegal pepper
- 2 tablespoons of cayenne pepper
- 1 onion
- 2 cloves of garlic
- 1 liter of meat broth
- Salt to taste
- 1 tablespoon of beef vinegar
Method
- Rinse the chickpeas and cook them in boiling water for 10 minutes, then cool them under cold water.
- Dice the vegetables and meat into small pieces.
- In a large pot, heat the palm oil and sauté the garlic and onion.
- Add the meat and vegetables, sauté for 5 minutes.
- Add the peppers, meat broth, and spices, bringing to a boil.
- Cook on medium heat for 30 minutes, adding the chickpeas and salt.
- Finally, add the beef vinegar and mix well.
- Serve hot with bread.
