Lutefisk

Ingredients
- 1 kg of lutefisk
- 1 liter of water
- 100 g of sugar
- 100 g of salt
- 1 liter of vinegar
- 100 g of potatoes
- 2 onions
Method
- In a pot, mix the water, salt, and sugar, bring to a boil, and let it cool.
- In another pot, mix the vinegar with the lutefisk, let it rest for 24 hours.
- In a pan, cook the potatoes and onions until they are soft.
- Place the lutefisk in the salt and sugar water solution for 24 hours, changing the water every 12 hours.
- Place the lutefisk in the vinegar solution for 24 hours, changing the vinegar every 12 hours.
- Drain the lutefisk and serve it with the potatoes and onions.
The story
Lutefisk has a history dating back to the 17th century, when Norwegian fishermen used this method to preserve fish during the long winter.
