Lugaw

Ingredients
- 1 cup of toasted rice
- 2 cups of chicken broth
- 1 tablespoon of coconut oil
- 1/2 cup of chopped onion
- 1/2 tablespoon of chopped ginger
- 1/2 tablespoon of chili
- salt to taste
- 1 tablespoon of avocado slices
- 1 tablespoon of soy sauce
- 1 tablespoon of chopped coriander
- 1 tablespoon of mango slices
- 1 tablespoon of fresh lime juice
Method
- In a pot, heat the coconut oil and sauté the onion, ginger, and chili for 2-3 minutes.
- Add the toasted rice and stir well.
- Pour in the chicken broth and bring to a boil.
- Maintain a moderate heat for 10-15 minutes, stirring occasionally.
- Add salt, avocado, soy sauce, coriander, mango, and lime juice.
- Serving: Serve hot in a bowl.
