What happens when a frittata turns into a sweet treat? These fried cheese pastries, crispy and sweet, are the result!

Ingredients
- 250 g of fresh cheese
- 2 eggs
- 100 g of sugar
- 1 tablespoon of honey
- 1 teaspoon of rum (optional)
- 1/2 cup of all-purpose flour
- 1/2 cup of confectioners' sugar
- 1/2 cup of olive oil
- Cold water for cooking
Method
- In a bowl, mix the fresh cheese, eggs, sugar, honey, and optional rum. Add the flour and mix until you get a smooth batter.
- Heat the oil in a pan. Use a spoon to drop small portions of the batter into the hot oil, forming small crostatas.
- Fry the crostatas until golden and crispy, about 2-3 minutes per side.
- Drain the crostatas on paper towels and dust with confectioners' sugar.
- Serve warm with additional honey if desired.
- Let them cool and enjoy!
The story
Loukoumades are a traditional Greek treat with roots in ancient times. They are said to have originated as a variation of fried dough, but with a sweet twist.
