Lontong Sayur

Ingredients
- 200g of lontong
- 500g of mixed vegetables (zucchini, onions, carrots, pumpkin)
- 1 chili pepper
- 1 onion
- 2 garlic cloves
- 1 liter of vegetable broth
- 2 tablespoons of coconut oil
- 1 tablespoon of sweet soy sauce
- salt and pepper to taste
- 1 tablespoon of coriander
- 2 tablespoons of candied cherries
Method
- Make the vegetable broth with vegetables and water, adding salt and pepper to taste.
- In a pan, heat the coconut oil and sauté the garlic, onion, and chili pepper.
- Add the chopped vegetables and cook for 10-15 minutes.
- Add the lontong and cook for another 5-7 minutes.
- Add the vegetable broth, sweet soy sauce, and coriander, stirring well.
- Bring to a boil and simmer over medium heat for 20-25 minutes, adjusting the salt if necessary.
- Finally, add the candied cherries and mix well.
- Serve hot with lontong and vegetables.
