Ingredients

  • 200g of lontong
  • 500g of mixed vegetables (zucchini, onions, carrots, pumpkin)
  • 1 chili pepper
  • 1 onion
  • 2 garlic cloves
  • 1 liter of vegetable broth
  • 2 tablespoons of coconut oil
  • 1 tablespoon of sweet soy sauce
  • salt and pepper to taste
  • 1 tablespoon of coriander
  • 2 tablespoons of candied cherries

Method

  1. Make the vegetable broth with vegetables and water, adding salt and pepper to taste.
  2. In a pan, heat the coconut oil and sauté the garlic, onion, and chili pepper.
  3. Add the chopped vegetables and cook for 10-15 minutes.
  4. Add the lontong and cook for another 5-7 minutes.
  5. Add the vegetable broth, sweet soy sauce, and coriander, stirring well.
  6. Bring to a boil and simmer over medium heat for 20-25 minutes, adjusting the salt if necessary.
  7. Finally, add the candied cherries and mix well.
  8. Serve hot with lontong and vegetables.
