Ingredients

  • 200 g of beef strips
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 2 carrots
  • 1 red onion
  • 1 tomato
  • 2 tablespoons of onion sauce
  • 2 tablespoons of soy sauce
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste
  • Oil for frying

Method

  1. Cut the beef strips into small pieces and set aside.
  2. Dice the onion, peppers, carrots, and red onion.
  3. In a pan, fry the oil and the vegetable cubes until golden.
  4. Add the onion sauce, soy sauce, and balsamic vinegar, and stir well.
  5. Add the beef strips and cook for about 3-4 minutes, until well done.
  6. Season with salt and pepper, then serve the lomo saltado with the vegetables and sauce.
  7. Slice the tomatoes and add them on top of the sauce for a more colorful version.

The story

Lomo saltado originated during the colonial period when Europeans introduced frying techniques and condiments to Peru. It became particularly popular during the 1900 Revolution when urban workers adopted it as a quick and economical lunch.
